The Profession skill can be used untrained.
I do not agree on all the listed profession skills from Pathfinder. This is a selection from that list that are NOT covered by the Profession skill, with indications as to what skill should be used instead.
- Architect: Knowledge (engineering)
- Barrister: Knowledge (local)
- Brewer: Craft (brewer)
- Baker, butcher, cook: Craft (cook)
- Driver, shepherd, stable master: Handle Animal
- Engineer: Craft (mechanic), Disable Device, or Knowledge (engineering)
- Herbalist: Craft (alchemy)
- Merchant: Appraise
- Midwife: Heal
- Scribe: Craft (calligraphy)
- Tanner: Craft (leather-worker)
- Trapper: Survival
This is a partial list of possible profession skills: Clerk, courtesan, farmer, fisherman, gambler, gardener, innkeeper, miner, sailor, servant, soldier, and woodcutter.
Gambling
Profession (gambling) is the art of studying the odds and waiting patiently for the odds to bring you money. Playing it safe means you earn money at the standard rate for a profession. A more risky game has much greater potential rewards and pitfalls.
High-risk gambling is normally conducted in 1-hour bouts. A careful gambler only plays an hour a night in one locale; doing more risks people noticing your winnings, legitimate or not. The DC depends on the competition, which in turn depends on the stakes; the higher the stakes the greater the potential win and loss. In "boomtown" settings where there is plenty of bored men and ready cash, DCs are lower. Many bored courts count as boomtowns.

A success means you earn a number of coins equal to your margin. A loss means you loose as many coins. If you are not satisfied with the result, you can try to cheat - roll Bluff or Sleight of Hand against the difficulty (you can use both skills) and use the better roll. Failure by 5 or more in this case means you get caught.
When playing another character, rolls are opposed - Profession (gambler) against itself (or Wisdom), Bluff against Sense Motive and Sleight of Hand against Perception.
